The One Non-Negotiable on our Easter Sunday Menu

What are you serving on Easter Sunday?  Here's what's on our menu.

  • Ham
  • Rolls
  • Asparagus
  • Potato Salad
  • Spinach Strawberry Salad
  • Deviled Eggs
  • Pineapple Casserole
  • Resurrection Cake

A dear woman in our church is bringing us a ham and rolls.  My sweet mother-in-law is bringing vast numbers of deviled eggs.  The kids will put together the Resurrection Cake.  Which leaves just a few items for me!

The one absolutely non-negotiable on our Easter Sunday Menu is Pineapple Casserole.  It is SO not the way our family usually eats, but once a year we'll throw caution to the wind and enjoy.

Pineapple Casserole

Ingredients

32 oz crushed pineapple, drained
1/2 cup sugar
4 Tablespoons flour
6 eggs, beaten
8 slices of white bread, cubed
1 cup of butter, melted

Directions

  • Preheat oven to 350
  • Spray 13" x 9" pan with cooking spray
  • Mix sugar, flour, and eggs
  • Add pineapple
  • Pour into pan
  • Toss bread cubes in butter
  • Sprinkle on top
  • Bake for ~ 40 minutes at 350 degrees

Paired with ham, it is truly amazing.

What's on your menu for Easter Sunday?  If you try the Pineapple Casserole, let me know what you think!
